I had some extra tomatoes sitting around from my CSA with Allenbrooke Farms & decided I wanted to make something delicious so they wouldn’t go to waste! I guess I was also in a baking mood, so the Tomato & Goat Cheese Galette was made!! Here is the recipe!
Tomato & Goat Cheese Galette
- 3-4 tomatoes
- 1 Small onion (I also used some green onions because I had them) chopped
- 1 t minced garlic
- 8 goat cheese
- Fresh or dried thyme-1 teaspoon
- 1-2 Tablespoons honey
- 1/2 cup butter, cut into tiny pieces
- 1 1/2 cups flour
- 1/2 t salt
- 1/2 t sugar
- 3-5 T cold water
Cut cold butter into flour, salt & sugar. Once it resembles a pea size (the butter), mix in water 1 T at a time until dough forms. Once dough forms, shape into a ball & Saran Wrap & place in freezer for 30 minutes.
While dough is in freezer, chop onions & cook on medium heat in skillet with a couple tablespoons of oil (I use avocado oil). Add garlic & some salt & pepper to taste. Sauté for around 10 minutes until nice & caramelized. Set aside.
Slice tomatoes & salt & pepper.
Once dough is ready roll out into a large circle on a floured surface (does not need to be perfect). Layer with goat cheese, onions & garlic, a heavy drizzle of honey, then top with tomatoes. Fold over edges on top of tomatoes. It should not touch the middle (you should see tomatoes on top). Sprinkle thyme on top of tomatoes & dough. Brush some melted butter on dough & bake on parchment paper for 1 hour at 375°.
Once done, sprinkle more goat cheese & an extra drizzle of honey. Eat warm or room temperature. Enjoy!
